And using all 4 memory banks inhibits your ability for overclocking, and creates slightly extra load on the system... While at standard clock speeds 4x1gb is quicker (
slightly) than 2x2gb - if you're overclocking then you'll suffer for having all 4 banks in use.
The 1066mhz stated for the mobo is the maximum fsb, you can put any ram in below that speed. You could even put ram in higher than that speed, but you'd have to underclock it so it isn't recommended. Personally I'd grab 2x2gb sticks of PC6400 (800mhz) ram.
