The majority of SLI boards are made by Foxxcon and just relabeled EVGA or XFX or made by Asus. I would just go with price vs desired features since the majority of these boards are more or less the same.

As for flavors the 680 boards are DDR2 RAM and 690 flavors DDR3.

But I would avoid SLI and just get one good video card, knowing that th next gen Nvidias are coming out late this year early next and are reported to be DX 10.1 and even more faster buting the gt280s to bed very early considering the price.

Temp wise speaking generally, since different CPUs have different ranges, 70C is hot, 60C is warm, 50C is good and below 50C is great.
