They already said that flying will not help in the sieges. As for the Balaur attacking is still not clear how it will happen, just that at random times they will attack either side. Yes the castle sieges will be like L2 is and the winners will have access to the mobs that are in the hunting grounds nearby. Not much of anything else of info on what will be available is out but CBT is still happening.
