Those are just the ones off the top of my head that I think you'd enjoy.. There's a couple of anime "holy grails" in there (ie Baccano, Fate-Stay, Full Metal Panic, GitS) - ones that pretty much everyone agrees are fantastic.
Once you've watched all those (should take you a while), tell us which ones you prefered and I'm sure myself, or some other Otaku (Taiyz probably) will direct you to more similar animes :)

I don't agree with all of the rankings, especially FMA being #2, among other entires. I'd guess most of the voters are somewhat more casual anime hobbyists, which probably isn't a bad thing if you're new to anime and looking for something to watch, though.
I can see you're into action (or perhaps that's just all you've seen), in which case I would recommend shows like:
Black Lagoon
Full Metal Panic: The Second Raid
Ghost in the Shell: Stand-Alone Complex
Gunslinger Girl
Mnemosyne
Seirei no Moribito
Note that this is mostly somewhat more mature stuff than what you've been watching before, especially Mnemosyne, which I would not recommend for non-adults. I don't know how old you are but I decided to throw it in there anyway because it's really good.

So I'm gonna bring up Sword of the Stranger. It's a samurai action movie about a lost boy, the wandering swordsman he meets, and the cult they fight against. If there's one thing you can count on in the film, it's "quality." The action isn't popping up around every corner (it was like that in Samurai Champloo too,) but it kicks up enough spectacular sights that are totally a treat for the eyes; enough to make the movie worth checking out.
It doesn't have the overly stylistic tone that Samurai Champloo has (or Cowboy Bebop, since they're by the same people; the comparisons are easy to draw) but it does a great job of outlining classic samurai action with the modern CG tricks and themes that you'll probably find amusing since you're getting into anime in this generation.
If you want something more retro, I'd strongly suggest Air Master. It's a huge send-up to the fighting/battle manga genre, with some comedic and bizarre elements. Instead of a muscle-bound grunting man in a tight outfit, you've got a really tall and toned schoolgirl character who decided to give up gymnastics for Street Fighting; it's pretty crazy, with as much over-the-top fighting and action as it has humour.
I'd also like to promote Get Backers. I can't do a good job of that though, because nothing I can say can do it justice. The Get Backers consist of two guys named Ban and Ginji; you lose something? They're get it back, whatever it might be. With Ginji able to generate electricity in his body as if he were an eel (although more comparable to Pikachu given his spiky blond hair and frequent chibitizations which looks like a hamster...) and Ban able to use the Jagan ("Evil Eye") to give anyone who has made eye contact with him a vision for exactly 1 minute (3 uses per day >_>,) as well as having 2 kilograms worth of gripping power in each of his hands, they're armed with some unique tools to kick *** and otherwise go adventuring. The other characters in the series have have even wilder powers; it's a wild ride, with a lot more structure than your typical modern shounen series like Naruto or Bleach...At least, in my opinion. There's a lot of comedy as well; it's a unique series with memorable characters. There's no harm in giving it a chance!
Another pair I'm obliged to mention are History's Strongest Disciple Kenichi and Inukami!. Why do I bring them both up? Because they're easily my most favourite anime in existence.
Histroy's Strongest Disciple is about a high schooler named Kenichi who gets bullied a lot and wants to become stronger through martial arts; this doesn't really go anywhere until he witnesses a female classmate kick some major yakuza *** on the street. After speaking to her, he's lead to the Ryouzanpaku dojo, where several godly masters of the martial arts offer Kenichi tutelage. And so begins his quest to become stronger for himself, and to protect the many friends he makes across the series. The best thing about the series is its endless charm. Every character is lovable, and every plot twist and decision made in the series is immensely satisfying and I dare-say that not even Disney (or any other example you can come up with >_>) can match some of the most amazing moments of the series. The martial arts and fighting are intriguing, the comedy is golden, there's a bit of romance in there, and every single element of the series compliments the others. You need to watch this TO LIVE.
Inukami! is basically your introduction to the world of modern anime comedy. It focuses on the Kawahira family; mostly the youngest member, Keita. Keita is an Inukami Tsukai (trainer, tamer, etc.) and has partnered with Youko; an Inukami, of course. Inukami are dog-like spiritual beings (they have a canine form in addition to a human form with added fluffy tail =P) that can command various magical powers. Inukami Tsukai have powers of their own, such as Keita being able to turn erasers carved into the shapes of frogs into miniature ballistic missiles...So you can already tell that you've got a magical adventure shaping up here. Together, Keita and Youko complete various tasks for a man named Karina; gathering up various evil artifacts that are misused by all sorts of crooks. From a possessed cookoo-clock that dresses people in bizarre cosplay outfits, to a device that can dissolve all the clothing a man (and only men >_>) is wearing, there's a lot of strange and comedic events that occur. Keita's a bit of a pervert, and that isn't helped by the supporting cast which mostly consists of attractive Inukami women you'd expect to find in a harem genre anime; he'll often run off to hit on girls, only to be comedically punished by Youko as she throws balls of fire at him, or teleports away all his clothes in the middle of a public intersection.
The animation is pretty amazing and all the comedy and action is very fresh; it isn't a family show by any means due to the perverted comedy and some adult themes (mostly stemming from that '>_>) but it's all good, somewhat-clean fun with lots of modern-style action that you wouldn't really find easily, elsewhere!
I'm gonna second Tokyo Majin Gakuen Kenpuchou:Tou, BECK: Mongolian Chop Squad and Baccano! (Huh, Howling I thought you weren't very impressed when I recommended it?) as well as Air Gear and Black Blood Brothers.
I would also combo up Howling's recommendation of Haruhi by pushing all of Kyoto Animation's stuff on you. Be sure to check out The Melancholy of Haruhi Suzumiya, Kanon, Lucky Star and Clannad. Preferably in that order (though Kanon and Haruhi are interchangeable and Clannad can fit in anywhere) as Lucky Star references the first two a lot. I hear that AIR is also a good anime, but I haven't seen it due to a personal aversion from it concerning some plot details I've had spoiled and sounded uninteresting to me.
If Howling wanders back in here, along with Midgarsormir, you guys should check these out too.

The reason for the lists is because I've seen so many I enjoyed I can't pick out a few =( I only stopped because I realised my list was getting a little too big for the poor guy :D

I thought Kanon was sposed to be a waste of time?
Air was definitely a waste of time, there's no story until the last 2 episodes and even then it's not exactly exciting. I wouldn't recommend it to anyone, except those strange few who enjoy random animes with no point to them.

Afro Samurai (definetly the best advice i could give u)
Basilisk (should suit u very well)
Devil May Cry (u might like it though i havent finished it myself xD)
Bus Gamer (only 3 ep as they are just OVAs but the fighting is really nice)
Histroy's Strongest Disciple Kenichi (highly recommended as already stated by Taiyz and Howling)
well furthermore as a animenewby u should visit Anime Recommendations, Anime Reviews, and More! - Anime-Planet , if u need any advice for animes this is definetly the best place to go i think
